In general, microorganisms are more tolerant to dry heat than hot and humid ones. That is, the protein content of hot and humid coagulation proteins is much lower than that required for dry thermal oxidation of proteins, thereby killing microorganisms; and the presence of moisture facilitates the coagulation of proteins in the heat. In the local environment where the effect is, the more water or humidity is higher, the lower the temperature required for protein coagulation, and the faster the solidification rate, the better the killing effect on the peripherals.
In addition, hygrothermal penetration is also stronger than dry heat, because steam and water conduct heat more efficiently than air.
